Kelly's Peppermint Fudge

One of my favorite holiday activities is making Peppermint Fudge! This recipe is so easy and everyone thinks you slaved over it! It’s also a lot of fun to to do with kids! Our kids love giving this to teachers and neighbors and let’s be honest Clint and I love having it around the house as an after dinner treat!

Start off with 1 (11.5oz) package Ghirardeli Milk Chocolate Chips and 1 cup Ghirardeli Semisweet Chocolate Chips and 1 (14oz) can Eagle Brand, Dash of Salt

In a saucepan, over low heat, melt chips with eagle brand and salt. You can use a double broiler or the microwave, but I just melt it on the stove, stirring constantly. Once melted remove from heat.

Then you will need 3-4 Tablespoons of good quality Peppermint Extract (I add even more bc I LOVE that minty taste!)

Stir in the extract

Once mixed together spread evenly into foil lined 8-9in square pan

Crush peppermints (about 1/4 cup) and sprinkle the fudge with the peppermint candy

Chill in the refrigerator until firm. Then turn onto cutting board: peel off foil and cut into squares. Store at room temperature!
