Here is a little Q&A with Clint & Kelly about cooking and the kitchen!

Here is a little Q&A with Clint & Kelly about cooking and the kitchen!
What is your signature dish?
Kelly–I used to cook all kinds of fancy things, but these days my cooking is mainly weeknight meals that everyone will eat, which is super easy when it comes to Clint (he will happily eat anything) & super hard when it comes to the kids (picky-mcpickyville). One tried & true recipe i have is for brisket tacos (BONUS – you cook the meat in a slow cooker!) the kids will eat almost any meat in a tortilla with sour cream (!!) & Clint & I can load the tacos with avocado, cherry tomatoes, pico de gallo, etc… the meat cooks with potatoes & carrots, too, so we can get a few more veggies in (and maybe sneak them in the kids’ tacos!). Everybody wins (if I remember to turn the slow cooker on anyway 😜)!
Clint–Secret Harp Family Pancakes….Kelly & I lived in Paris and I was inspired to start making crepes. I became pretty good at making it actually, the locals were even impressed. When we had kids pancakes just made sense. I found a very basic recipe online and over the years began to adjust it. I would change the flour and sugar content, add in different spices, and now even beat the egg whites till there stiff and then fold them into the batter. The kids love it! On weekends I add chocolate chips to the top write when the pancakes come off the grill. I cover them with a plate and serve them to the kids and when they take the plate off they have melted chocolate on top!
What is your favorite kitchen gadget or tool that you can’t live without?
Kelly–years & years ago Clint & I used Christmas money from my mom & from each other & invested in copper pans. Those things are seriously possibly the best purchase we ever made. I remember we were so afraid that we wouldn’t be able to clean them because they’re not non-stick & now I don’t even know what to do with a nonstick pan! The cooking is so even & they make me feel professional!
Clint–I started making the Secret Harp Family Pancakes with a black slotted spatula. Hudson started making pancakes with me early on as and he has used that spatula as well. Actually all the kids have used the spatula on Saturdays when I would be working in the kitchen the kids would get up from watching cartoons and want to help. Over the years they have gotten pretty good at making them as well!
What food would you choose if you could only have one thing stuck on an island?
Kelly–Something with guacamole & queso would definately have to be involved.
Clint–Growing up when I was little spaghetti and lasagna were staples. I even had some of my birthdays at Spaghetti Warehouse in Atlanta. Spaghetti really hits all the major food groups for me, you have bread, meat, tomato sauce, and I love it with fresh mushrooms. If I was stranded on an Island it seems spaghetti would take care of you. Since I am a runner I would do a lot of running on the Island spaghetti would energize and take care of me.
Do you prefer savory or sweet dishes (to make or to eat)?
Kelly–I used to ALWAYS prefer desserts, but since my pregnancies, I definitely crave savory over sweet!
Clint–I love a good dessert, but at the end of the day I need to have salty and savory!
What is your favorite food from your childhood?
Kelly–I used to LOVE cheesecake when I was little – I thought it was so fancy!
Clint–Growing up both my grandmothers would make me scrambled cheese eggs. Also my mom would also make me scrambled cheese eggs, just talking about them makes me want them now!
